Why don't you just add a second virtual disk to the VM and use this as the target for the image? Once done you can either remove/delete the virtual disk from the VM again or - maybe even easier - prepare the second virtual disk (i.e. format it and create the folders you) and then backup this virtual disk to restore it (overwrite the increased virtual disk) after cloning is done.
